Gyropolis

Overview:

Gyropolis is a popular restaurant in Minnesota that needed more space for dining. The original 1,400-square-foot building included the kitchen and left little room for guests. Guests often had to wait outside to be seated.

The project expanded the restaurant with an additional 1,700 square feet for indoor dining, a large patio, and a 700-square-foot trash enclosure. The goal was to create a bright, welcoming space that could be used flexibly for both daily dining and private events.

Project Goals:

  • Expand dining capacity to accommodate more guests and eliminate outdoor waiting.

  • Add flexibility to support both everyday dining and private events after hours.

  • Optimize customer experience with a comfortable indoor queue area.

  • Create a cohesive, bright, and authentic Greek-inspired aesthetic.

  • Improve functionality through a more efficient layout and materials suitable for long-term use.

Design and Implementation:

Layout and Structural Changes
The new dining area adds 1,700 square feet to the existing building and connects to a new patio that offers extra space for outdoor dining. The design also includes a 700-square-foot trash enclosure to improve site organization. Inside, the layout was opened up to allow larger tables and more flexible banquette seating. The new queue area gives guests space to wait comfortably inside.

Materials and Finishes
The design uses bright, white finishes to reflect the Greek theme. Dark tiles from the old space were replaced with lighter surfaces to make the restaurant feel more open. Exposed glulam beams add warmth and texture, while stone at the banquette divider brings a rustic touch.

Key Elements

  • Greek-inspired exterior and entry.

  • Light and airy dining atmosphere.

  • Flexible seating layout for groups and events.

  • Comfortable indoor waiting area.

  • Spacious patio for seasonal use.

Challenges:

  • Working with a small original footprint required careful planning to integrate the new dining area and patio. The team balanced the fresh Greek aesthetic with warm, rustic details like beams and stone. The design also needed to support smooth operations for both staff and guests.

Outcome:

The remodel transformed Gyropolis into a bright, inviting restaurant that reflects its Greek identity. The expanded dining area nearly doubled the space, and the new layout improves flow, comfort, and flexibility. Guests now enjoy a more spacious, welcoming atmosphere, and the restaurant can host larger groups and private gatherings with ease.
